- Preheat the oven to 250° F.
- Combine the apples, cider, brown sugar blend, and salt in a large Dutch oven. Cook uncovered over medium-high heat. Bring to boiling, then reduce the heat and simmer until the apples are soft.
- Remove the apple mixture from the stovetop. Stir in the lemon juice, cinnamon, and vanilla extract. Puree the mixture in a blender.
- Return the apple mixture to the Dutch oven or place in a large baking pan. Bake uncovered for 2 1/2 to 3 hours, until the mixture thickens and darkens. Remove it from the oven. Cool, then transfer to an airtight container. Store in the refrigerator for up to 5 days. Serve on pancakes, waffles, yogurt, biscuits, or lean pork.
